Chicken & Spinach Pasta


Was feeling quite lazy tonight after a day of housework, grocery shopping and working out and I didn't really want to cook much. Knew I had spinach that needed using and I had just bought some chicken breasts so this was the easiest thing to keep me away from the junk. It is a really quick, easy and satisfying dinner.

Ingredients:
120g pasta shapes
300g skinless boneless chicken breast cut into bite size pieces
100g half fat creme fraiche
150g spinach
2 large cloves of garlic crushed
2 tsp chopped fresh sage
salt & black pepper

Cook the past according to the instructions on the pack. While this is cooking mist a nonstick frying pan with cooking spray and heat to a high heat and brown the chicken. Turn down the heat and continue to fry until just cooked through. Add the garlic and cook for 2 more minutes. Add the spinach and a ladle or 2 of the pasta water and cook until the spinach is just wilted. Set this to one side until your past is cooked.

Drain the cooked pasta and put back in the pot, add in the chicken/spinach and mix through the creme fraiche and sage. Season with salt and lots of black pepper. Put on a medium heat until everything is combined and hot through. If the sauce is a bit watery you can add one tsp of cornflour mixed with a little water and cook for a couple of minutes until thick and creamy. Serve immediately with a salad.
