Eggs in Spicy Tomato Sauce


Weekend brunch is one of my favourite things in the world! Going out of course would be my preference but in the interest of saving money and smartpoints I love finding ways to do a home cooked brunch as good as any you'd get eating out. This ticked all the boxes and while my other half may have been sceptical at first, by the time he'd tasted it he'd come around. 


This is so filling and tasty for only 4 Smartpoints or free on No Count. But the really great thing about this is its totally adaptable. You can add in some chorizo or torn ham, a few mushrooms or peppers. Whatever you like just be sure to add the extra Smartpoints for it. I had some black pudding on the side of mine and served it with a Slimster bun on the side to help mop up some of the sauce at the end.

Ingredients
4 eggs
1/2 red onion chopped
1 clove garlic
1.5 tsp smoked paprika
1.5 tsp hot paprika
1 tsp hot chilli powder
1 can chopped tomatoes
1 tbsp tomato purree
Splash of soy sauce
Splash of balsamic vinegar
Splash of tobasco
Chopped Parsley
2 tsp quark/0% greek yoghurt
salt & black pepper

Mist a deep, non stick frying pan with oil (I use the Tesco Rapeseed oil, 5 sprays for 0 smartpoints) and fry the onions until soft. Add the spices and garlic and fry for 5 minutes.

Stir through the chopped tomatoes, tomato purree, soy sauce, balsamic vinegar and tobasco. Simmer for 5-10 minutes and season to taste. make 4 wells in the tomato sauce and crack an egg in each. Cover a cook until the white is set and the yolk is cooked to your liking. 

Divide between 2 bowls, scatter the parsley and the quark/greek yoghurt over and serve immediately.
